No-Bake Brownie Protein Bites


Description

These brownie bites are a super healthy chocolate fix for you, whenever you need it!


Ingredients

Units Scale

1/2 cup pecans

1/2 cup raw cashews

1/8 teaspoon Himalayan pink salt

1/4 cup cacao powder

1 scoop chocolate protein powder

13 tablespoons erythritol (or sweetener of your choice)

3/4 cup almond butter

1 teaspoon vanilla

2 tablespoons coconut flour (optional)

1/4 cup Lily’s dark baking chips


Instructions

  1. Place pecans and cashews in the bowl of a food processor. Pulse on and off until finely ground.
  2. Add the salt, cacao or cocoa powder, protein powder, erythritol (or sweetener of choice), almond butter, and vanilla to the processor. Pulse until combined. Add coconut flour to thicken the batter if necessary. Stir in the baking chips.
  3. Form each ball with a cookie scoop. Place on a small plate or pan that you can fit in the freezer to set up. Use waxed or parchment between layers.
  4. Freeze for an hour, and when firm, move to a Ziploc freezer bag or a freezer-safe container to store. Enjoy!

Notes

Storage Freeze on a flat surface, then transfer to an air-tight container (such as these cute & colorful freezer containers, affiliate link) or put them in a Zip-lok freezer bag. The protein balls should remain fresh in the freezer for up to 3 months. To thaw, take them out individually as craved, 😉 then place them on the counter at room temperature or in the refrigerator until soft.
