1 Melt the coconut oil in the microwave in a large glass bowl, and let it cool for a few minutes (but not enough to solidify) so it’s not too hot when added to the other ingredients.

This will be the base of our moist, delicious coffee cake. Then, add in the almond flour, salt, baking soda, and sweetener. Stir everything together until it’s nice and smooth, making sure there are no clumps left.

2 Next, crack the eggs and add them to the mixture. Stir until everything is well combined, creating a smooth, thick batter.

3 Press the cake batter into your prepared square pan, spreading it out evenly to cover the bottom.

2 1/2 cups blanched almond flour, not almond meal

1/4 teaspoon salt

1/2 teaspoon baking soda

1/2 cup granulated Swerve (or favorite sweetener)

3 large eggs

2 tablespoons sour cream

1 teaspoon vanilla

Cinnamon Sugar Layer

1/4 cup Swerve brown sugar (or favorite sweetener)

2 teaspoons cinnamon

1 tablespoon melted butter

chopped nuts, optional (I used pecans)

Vanilla Glaze (optional)

1 tablespoon Swerve confectioners’ sugar (or favorite sweetener)

1 tablespoon sour cream

1/2 teaspoon pure vanilla extract


Instructions

  1. Preheat oven to 350°F. Prepare an 8-inch glass pan by lining it with parchment and patting it with coconut oil.
  2. Melt the coconut oil in the microwave, then add the almond flour, salt, baking soda, and sweetener. Mix well to remove lumps and combine well. Add in eggs, sour cream, and vanilla. Stir until well combined.
  3. Press the batter evenly into the prepared pan.
  4. For the cinnamon sugar layer, stir together all topping ingredients,
    sweetener, cinnamon, melted butter, and nuts, (optional) in a small bowl. Mix well and sprinkle evenly over the batter.
  5. Cover the pan with aluminum foil and bake at 350°F for 15 minutes. Remove the foil and bake for another 10-15 minutes, or until the cake has set, turns golden brown, and when a toothpick inserted into the middle comes out clean.
  6. While the cake is cooling, make the vanilla glaze. Sift the powdered sweetener into a small bowl. Add in the sour cream and vanilla extract. Whisk to combine. Drizzle over cooled cake.
