The recipe was from Mrs. Jones, my parent’s elderly go-to neighbor when they were newly married.

Gluten Free Cut Out Cookies

Description
Treat yourself! You can have all the fun and enjoyment of decorated cookies without gluten and refined sugar!
Ingredients
Cookies
6 tablespoons Grass-fed butter, softened
1/3 cup Swerve Confectioners Sugar or 3 tablespoons Honey
1 1/2 cups Blanched Almond Flour
1/4 teaspoon Kosher Salt
1/2 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract
Frosting
2 1/2 tablespoons grass-fed butter, softened
8 ounces of cream cheese, softened
1/2 cup Swerve confectioners sugar
2-3 tablespoons of almond milk
1/8 teaspoon almond extract
Instructions
Cookies
Cream butter in the bowl of an electric mixer until fluffy, about 3 minutes. Slowly add the remaining ingredients and blend until incorporated.
Wrap the dough in plastic wrap and chill for dough for an hour.
Preheat oven to 350 degrees. Roll out the dough between two sheets of parchment or waxed paper. Make shapes using your favorite cookie cutters. Bake until firm and slightly golden. Watch closely for your desired doneness. Approximately 10-14 minutes. Cool before decorating.
Frosting
In the bowl of an electric mixer, blend the butter and cream cheese on medium-high until smooth. Slowly add confectioners sugar, almond extract, and almond milk. Continue to mix until frosting is sugar is fully incorporated and smooth.
