12 Feb Gluten Free Decorated Cookies for Valentine’s Day
I am forever on the hunt for a delicious, but healthy cutout, sugar cookie recipe. My perfect cookie would be gluten-free, without refined sugar and the inflammation and joint pain I get from it. Perfect for Valentine’s Day yes, but isn’t every holiday a great holiday for decorated sugar cookies?
Growing up my favorite decorated cookie recipe was hands-down my Mom’s “White Sugar Cookies”. Thanks to “Mrs. Jones”, who I never actually had the privilege of meeting, but heard so much about through the years. She shared many recipes with my Mom that became staples in my childhood home.
(I interrupt this story with a quick shout out to my Wisconsin friends … how do you like that dough shape above? LOL)
Mrs. Jones was my parent’s go-to neighbor when they were young and newly married. I can imagine how this older, seasoned housewife brought a world of welcome advice, assistance, and recipes to my young Mom. Isn’t it funny how recipes and a boatload of memories are handed down through the generations? Oh, and also funny that my Mom always called her “Mrs. Jones”, not Agnes or Gertrude? I actually don’t know her first name. You gotta love that good old fashioned respect.
I digress. Back to healthy cookies! I think you will find today’s nutritious cookie recipe the perfect substitute for your unhealthy favorite. It delivers everything you want and need. First, it is delicious! It has a lovely smooth texture, is sturdy and rolls out beautifully. It’s got just the right balance of crisp and softness. Also, it has a perfect hint of salt. You’ll love how easy and quick it comes together with only 5 ingredients. Yes, FIVE. And it tastes great even if you slightly overbake it. Not that I would ever do such a thing. 😉

Treat yourself on Valentine’s Day! You can have all the fun and enjoyment of decorated cookies without the gluten and refined sugar!
6 tablespoons Grass-fed butter, softened
1/3 cup Swerve Confectioners Sugar or 3 tablespoons Honey
1 1/2 cups Blanched Almond Flour
1/4 teaspoon Kosher Salt
1/2 teaspoon Vanilla Extract
1/2 teaspoon Almond Extract
2 1/2 tablespoons grass-fed butter, softened
8 ounces of cream cheese, softened
1/2 cup Swerve confectioners sugar
2-3 tablespoons of almond milk
1/8 teaspoon almond extract
Cream butter in the bowl of an electric mixer until fluffy, about 3 minutes. Slowly add the remaining ingredients and blend until incorporated.
Wrap the dough in plastic wrap and chill for dough for an hour.
Preheat oven to 350 degrees. Roll out the dough between two sheets of parchment or waxed paper. Make shapes using your favorite cookie cutters. Bake until firm and slightly golden. Watch closely for your desired doneness. Approximately 10-14 minutes. Cool before decorating.
In the bowl of an electric mixer, blend the butter and cream cheese on medium-high until smooth. Slowly add confectioners sugar, almond extract, and almond milk. Continue to mix until frosting is sugar is fully incorporated and smooth.
